Every sale adds to the grand total just like driving adds to your odometer. Take yesterday's ending grand total and subtract it from today's grand total and come up with your sales for the day. Why is this so important? Simple. Just like your car, if someone took it for a ride and you didn't know it you would be able to figure it out by doing the math. Take yesterday's odometer reading and subtract it from today's and you would know your car had been driven. So, if you had a closing manager who knew how to manually close the system they could run the day end close a little early and then reopen the restaurant for the last couple of hours for themselves.
